KAASTENGELS

Kaastengel, which I hope I’m spelling correctly, is a traditional Dutch cookie that is very popular in Indonesia. Most Indonesians enjoy having it at home during the two major holiday seasons: Eid Al Fitr (Indonesian: Lebaran) and Christmas.
This cookie typically features Edam cheese, a classic Dutch cheese. Some families choose to combine Edam with cheddar or Parmesan, depending on personal preferences. If needed, Gouda cheese can also be used as a substitute for Edam or cheddar.
My best friend Hedy shared her mother's recipe with me, and I made a few adjustments. I increased the amount of cheese compared to her original recipe because my family loves it that way. Additionally, I added baking soda to make the cookies crispier. Since butter can become oily, especially in tropical countries, I recommend refrigerating the dough and only removing it for the portion you intend to shape. This helps prevent the butter from melting too quickly.
- 350 grams of grated Edam cheese (or cheddar cheese)
- 800 grams of all-purpose flour
- 500 grams of butter
- 3 egg yolks
- 1 white egg
- 1/2 tablespoon of baking powder
- salt to taste
- 50 grams of grated Parmesan cheese.
:- Mix butter, egg yolks, and a white egg, then add the grated Edam or cheddar cheese.
- Add the flour, salt and baking powder and knead the mixture together.
- Roll the dough and cut into small rectangles.
- Place them onto baking trays.
- Preheat the oven to 180°C.
- Brush each one with the egg yolk and sprinkle with grated Parmesan.
- Bake until golden, at about 20-25 minutes, and leave it inside the oven for a while.
