EGGLESS TIRAMISU
Quick, no raw egg, no alcohol
(Suitable for Vegetarians)
I love TIRAMISU, but I cannot have it from most bakery shops in New Zealand because the original recipes use KAHLUA coffee liqueur, which is a top brand of alcohol. Another problem is the egg in its ingredients since Tiramisu is not an oven-bake recipe. That method will make the egg remain raw.
So, I make it at home, and I have changed the popular dessert's ingredients. For my family, this dessert contains no alcohol and no raw egg.
This dish will be ready in less than 30 minutes.

Ingredients :
- 24 sponge finger biscuits
- 500 ml strong coffee or espresso, cooled to room temperature
- 250 gr cream cheese or mascarpone cheese
- 2 tbsp Cadbury drinking chocolate powder
- 2 tbsp cinnamon powder
- 250 ml fresh cream
- 4 tbsp icing sugar
- 1 tsp vanilla extract
Method :
- Whisk the fresh cream with sugar and vanilla and add 50ml of coffee until thoroughly mixed. Fold in the cream cheese until smooth.
- Mix Cadbury drinking chocolate powder with cinnamon, and set aside.
- Take one sponge finger at a time and dip it into the remaining coffee in a bowl.
- Set the biscuit in 6 serving glasses, using 4 sponge fingers and breaking them in half if necessary. Spoon the cream cheese mix
- until you reach the top of the glass.
- Dust with sifted chocolate cinnamon mix powder
- Refrigerate for 30 minutes to 1 hour to infuse the flavour.
- Serve them cold.
