AREM-AREM (Rice Filling)
My son was born in New Zealand. He prefers to eat arem-arem, Lemper Ayam or such food more than the other Indonesian foods every time we go to Indonesia for a holiday. This food can be quickly taken away and eaten up on the go.
1. Rice filling
Ingredients:
3 tablespoons oil
250g minced beef
150gr frozen carrots in small cubes
3 cloves garlic
Pepper to taste
A pinch of sugar
1 tablespoon fish sauce
Method
- Sauté garlic in oil until fragrant.
- Add minced beef and carrot, followed by salt, pepper, sugar and fish sauce.
- Stir until excess juice from the meat and carrot is absorbed and the beef is adequately cooked.
- Set aside and allow to cool.
2. The Rice cake:
Ingredients
1 thin (250 ml) of thick coconut milk
500g rice washed and drained
1 teaspoon salt
Pepper to taste
1 lemongrass
Banana leaves, for wrapping
Method
- Put rice in the cooker and add thin coconut milk, salt, pepper, and lemongrass.
- Cook until the coconut milk is absorbed completely and the rice becomes tender.
- Allow cooling.
3. The arem-arem (Mixed recipes 1 and 2 together)
- Fill one banana leaf with 2 tablespoons of rice.
- Flatten to 1cm thickness.
- Add 1-2 tablespoons of beef, roll up the banana leaf, secure both ends with toothpicks, or just fold at both ends. (Each arem-arem should be about 10cm long, with a diameter of 2½cm).
- Steam for about an hour until cooked.
- Allow cooling before serving.
