CHAWANMUSHI
(Steam Egg)

Ingredients:

- 4 eggs
- 1 cup cooled water or fish stock
- 1 sachet dashi no moto (dashi soup powder)
- 1 tablespoon soy sauce (adjust to taste)
- 2 teaspoons minced garlic
- 1/2 teaspoon crushed ginger
- 1/2 cup shiitake mushrooms (soaked in 1 cup of water and sliced thin)
- 1/2 cup shredded chicken or prawns
- 1 small spring onion, chopped into small pieces

Method:

1. Soak the shiitake mushrooms in water for 1 hour.
2. In a saucepan, whisk the dashi no moto into the water or fish stock, then add the soaked shiitake mushrooms (along with the water) and bring to a boil. 
3. Allow the mixture to cool.
4. In a medium bowl, gently whisk the eggs. Add the soy sauce and slowly pour in the cooled stock, mixing well.
5. Divide the shredded chicken or prawns evenly among four small teacups. 
6. Carefully pour the egg mixture into each cup until filled. 
7. Add chopped spring onion on top of each cup.
8. Cover the cups with aluminium foil or their respective lids.
9. Bring about 1 inch of water to a boil in a steamer or saucepan. 
10. Reduce the heat to a simmer and place the cups in the steamer. 
11. Cover and steam for 12 minutes, or until the eggs are firm but still soft and silky, similar to tofu.
12. Serve hot.
